Wedge Salad with Bleu Cheese Dressing

Wedge Salad with Bleu Cheese Dressing     

It seems simple.  But then I tried to make them and it’s just not as easy as cutting a head of iceberg lettuce into quarters and sprinkling the topping on.   Here’s what I learned!

It seems simple.  But then I tried to make them and it’s just not as easy as cutting a head of iceberg lettuce into quarters and sprinkling the topping on.   Here’s what I learned! 

Wedge Salad with homemade Bleu Cheese Dressing

Dressing
1 cup mayonnaise
3/4 cup sour cream
1/4 cup buttermilk
4 tbsp red wine vinegar
2 tsp Worcestershire sauce
1/4 tsp salt
1/4 tsp fresh ground pepper
1/4 tsp garlic
4-6 ounces Blue cheese
Pinch of dill

Mix ingredients together.  I prefer using my stand mixer but it can be mixed by hand.  Adjust salt, pepper and dill to taste.  Add additional buttermilk for desired consistency.  Refrigerate at least one hour.  Don’t skip this step! As the herbs and spices sit in the dressing the flavors begin to take hold.  If you eat it immediately it may taste bland.  

Wedge Salad

Ingredients
Iceberg Letter
Diced red onion
Sliced cherub tomatoes
Blue cheese crumbles
Sliced chives
Sliced  cooked Bacon
Diced Avocado
Home made Blue cheese dressing

1. Prep all ingredients

2. Core and Quarter lettuce.

3. Remove the middle of the leaving a relatively flat surface and creating a cup.

4.  Spread a thin layer of dressing on cup.

5.  Sprinkle desired toppings

6. Drizzle additional dressing

7. Refrigerate for 15 mins before serving
